Quick Chicken and Pesto Dinner Recipe

This easy chicken dinner is flavor-packed with a red pesto sauce full of tomatoes and spices. Plus, it's made in one pan in just 30 minutes!

- Chicken breast - Red pesto - Milk, cornstarch - Chicken broth - Parmesan cheese - Basil - Sun-dried tomatoes - Shallots, garlic, salt & pepper

Heat oil in a large pan on medium heat. Sear your chicken breasts for 4 minutes on each side, until golden brown.

Step 1

Remove the chicken from the pan. In the same pan, saute the garlic, shallots, and sun-dried tomatoes for about 2 minutes.

Step 2

Add the red pesto to the pan and it mix together with the rest of the ingredients. Let this cook for an additional 2 minutes.

Step 3

Deglaze the pan by pouring the chicken stock in and scraping the bits off the bottom. Then, whisk in the milk and cornstarch.

Step 4

Last, add the chicken breasts back to the pan with the sauce. Cover, and cook an additional seven minutes.

Step 5

Enjoy this delicious chicken and red pesto sauce on its own or over a bed of pasta or rice for a filling and flavorful meal!
