This is the ultimate sweet and savory breakfast. It features a baked sweet potato as the start of the show, along with chorizo, black beans, and a fried egg on top!

Ingredients

- Sweet Potato - Chorizo - Black Beans - Eggs - Butter - Salt and pepper to taste

First, poke your sweet potatoes with a fork at least 1/2" deep. Then, bake in the oven at 350 degrees for 35-40 minutes.

Step 1

While the potato bakes, fry the chorizo in a pan for 10 minutes until brown. Add the black beans for the last 5 minutes. Stir throughout.

Step 2

When done, remove the beans and chorizo from the pan. Then, fry your eggs to your desired doneness.

Step 3

Once the sweet potatoes are cooked, cut them in half and let cool a bit. Then, mash the insides with butter, salt and pepper.

Step 4

Last, assemble your potato by topping it with the chorizo and black beans first. Next, add your egg on top and enjoy!
