Ingredients

- Sweet potatoes - Butter - Salt - Eggs - Orange juice - Orange marmalade - Ginger - Biscoff Cookies

Boil sweet potato cubes in a large pot of water for 15-20 minutes. Then, puree in a food processor with orange juice, marmalade and eggs.

Step 1

Add the Biscoff cookies and  cold butter to a food processor. Blend until crushed, but not to a dust.

Step 2

Add the blended sweet potatoes to a greased 9x13 casserole dish, then top with the biscoff crumble.

Step 3

Bake casserole at 400 degrees F for 20 minutes, or until the top is golden brown. Then, enjoy!
