Ingredients

- Eggs - Cottage cheese - Gruyere cheese - All purpose flour - Onion - Bacon - Salt, pepper, red pepper flakes

Preheat oven to 425 degrees F. Place bacon and onion pieces on a tray and bake for 15 minutes.

Step 1

While bacon cooks, add the remaining ingredients to a blender and blend for 45 seconds until well mixed.

Step 2

Once the bacon and onions are done, cut them into small pieces and combine them with the egg and cottage cheese mixture.

Step 3

Pour mixture into a casserole dish, 8"x10" or a similar size. Top with half the cheese and bake for 45 minutes.

Step 4

Bake until the center is just set. Then, remove and top with more bacon and chives. Then, enjoy as part of a healthy breakfast!
