Bacon Cottage Cheese Egg Bake - A Make Ahead Breakfast

Loaded with plenty of eggs, crispy bacon, and two kinds of cheese, this egg bake is the perfect make ahead Christmas breakfast!

- Eggs - Cottage cheese - Gruyere cheese - All purpose flour (can sub gluten-free) - Onion - Bacon - Salt, pepper, red pepper flakes

Place bacon slices and diced onion pieces on a tray and bake them for 15 minutes at 450 degrees.

Step 1

Once the bacon and onions are done, cut them into small pieces and set aside until the egg mixture is ready.

Step 2

Add the eggs, cheese, flour, and spices to a blender and blend for 45 seconds until well mixed. Then fold in the bacon and onions.

Step 3

Pour the eggs into a casserole dish that's 8"x10" or muffin tins. Top with half the cheese and bake for 45 minutes.

Step 4

Bake until the center is just set. Then, remove and store in the fridge! Pop in the oven for 20 minutes before serving.
