✸ bison(or beef) ✸ onion & garlic ✸ chili seasoning ✸ tomato paste ✸ beans ✸ butternut squash ✸ enchilada sauce
First, gather all your ingredients. Then, dice your onions and garlic, drain the corn, and open up all the cans.
Add the ground bison or beef to a dutch oven and brown on medium heat. Break up into small pieces using a heavy spoon or spatula.
When the bison is almost done, add the onion, garlic, and tomato paste. Saute until fragrant and translucent.
Add everything else to the dutch oven and stir to combine. If you will be simmering a while, wait to add the squash.
Let this simmer for 10-15 minutes. Stir periodically to keep the bottom from burning.
Dish up the chili and top with your favorites. Some of ours are avocado, cilantro, jalapeño, greek yogurt, and chips!
