This sweet potato porridge is nourishing, ready in 15 minutes in the Instant Pot (or stovetop), and is so tasty with both sweet or savory toppings!

Ingredients

- Sweet Potatoes - Maple Syrup - Quinoa - Cinnamon - Salt - Coconut milk - Any toppings you like

Peel the skin off and then dice up your sweet potatoes into 1/2" - 1" cubes. Then, add all the ingredients to the instant pot.

Step 1

Stir everything together and then cook on high pressure for 6 minutes. After cooking, manually release the pressure.

Step 2

Open up the lid and use a fork or whisk to mash the sweet potato pieces. They can be roughly mashed, no need to go crazy!

Step 3

Below is the consistency we like our sweet potato porridge. It's thoroughly mixed but still has some small chunks.

Step 4

Next, add your favorite toppings. You can make a sweet porridge with syrup and fruit, or savory with garlic and eggs!
